All sensory evaluation services are performed by a panel of scientifically trained and experienced olive oil judges.

The Applied Sensory Olive Oil Taste Panel is accredited by the American Oil Chemists' Society (AOCS) and has been recognized by the International Olive Council (IOC).

The panel is administered by Sue Langstaff who is co-author of the book "Olive Oil Sensory Science," creator of "The Defects Wheel for Olive Oil" and a world-renowned olive oil judge and sensory educator.

Label the grade correctly - It's the law!

  1. Complete the "Olive Oil Sample Submittal Form"
  2. Decide which sensory evaluation service you need: basic, IOC panel test or detailed
  3. Package olive oil in 250 mL (or larger) bottle or other appropriate container
  4. Calculate final amount for service and write check
  5. Place olive oil and payment in shipping box
  6. Send via USPS, UPS or other to:
